BEST Chocolate Fudge Cookies ever

Chocolate fudge cookies are probably my favorite type of cookie in the whole world! When my husband and I lived in Utah we would go to Einsteins Bagels for lunch every now and then, and their chocolate fudge cookies were amazingly perfect! I have tried a few different recipes in the past to try and re-create ones that were as heavenly as those, but haven’t had any luck. Then a little while ago I found the idea on pinterest to use a box of fudge brownies to make them, and when I tried it out, they were SO EASY and so utterly and completely divine, that I decided this would be my go-to recipe for one of my all time favorite cookies, and I was so excited to finally find a recipe that lived up to the one from Einsteins! It really is genius! ;-)

Ingredients:
1 package fudge brownie mix
1 1/4 cup all purpose flour
1/4 cup packed brown sugar
2 eggs
1/2 cup melted butter
2 Tbsp water
1 cup chocolate chunks

Directions:
Preheat the oven to 350degF. In the bowl of an electric mixer, beat together the brownie mix, flour, and sugar. Add the eggs one at a time, followed by the butter and water. The brownie mixture should be nice and thick, but if it’s too floury, just add a little more water. Stir in the chocolate chunks with a wooden spoon.

Drop heaping Tablespoons of dough onto a greased cookie sheet, and space about 3 inches apart. Press down slightly, but don’t flatten completely. Bake for 9-11 minutes. Remove from the oven and allow to cool for a few minutes on the cookie sheet , then transfer to a cooling rack. I wasn’t going to post this recipe, because I like more “gourmet” recipes that are generally from scratch, but after making them several times in the last couple of months for various occasions, I realized it’s a recipe I just can’t live without! Plus it’s kinda turned into a new family favorite!
