I have wanted to do family photos for a REALLY long time now, I just haven’t been able to get my act together. At first I wanted to find the right outfits, and lose a few pounds…. silly reasons! Then we just got really busy with trips and work. Then we had a night free, scheduled it, and my kiddos got sick–so it has just been a little trickier than I thought to get it done.

Cream of Portabello Mushroom Soup

I am so behind on my posts it’s crazy! Amongst taking wedding photos and senior portraits this weekend (which I can’t wait to post, because they’re some of the best photos i’ve ever taken!) I also have a few amazing recipes I want to share, as well as my sons cute bedroom re-do. I’m trying to get my house together before my Mum and sister come to stay (from England) next saturday. I’m also taking a couple of camera classes right now, and learning manual mode (and I can’t WAIT to share what I have learned there!) We have our family pictures this weekend, and Disney on ice! (Yay!) And basically, all kinds of things happening. I can’t stress how crazy I have made my life this week, and my husband is leaving me alone while he goes on three business trips back to back to Las Vegas, California and Chicago! I just hope you will bear with me while I try really hard to play catch up a little bit!

I am in the middle of re-doing my sons bedroom, which should be finished this week! I just needed a few photos to frame for his wall, so I thought i’d post a few of my favorite pictures from our shoots. I wanted a cohesive theme, but I just couldn’t decide! He LOVES tractors–he’ll tell you everything about them if you ask, it’s amazing! He’s also obsessed with airplanes since his Daddy is getting his pilots license in the next week or two–{he asks him everyday when they can go fly together! It’s cute!} He also loves Harleys–because Grandpa is a big Harley rider, and his Dad and uncles all own one. So I thought I would take some pictures of him by some of his favorite things! The play tractor he’s always “working” on! The plane his Daddy is learning to fly right now, and the bike his Uncle just happened to have nicely polished up for us! So here are some of my fave’s: he is SUCH a cutie!!!!! I love my darling little “subject!”

Pork Tenderloin with Balsamic-Pomegranate Reduction

Of all the tricky, challenging dishes I have cooked in the past, Pork Tenderloin has to be one of my greatest nemesis’! I have tried several different recipes in the past (including stuffed tenderloin, brines, and roasting) but I always mess it up by undercooking it, and then when I try to save it, the tenderloin gets all dry and tough. Then today I cooked the most PERFECT, moist, juicy tenderloin that I almost couldn’t believe it came from my kitchen! What’s even weirder is that it didn’t require brining or stuffing or anything complicated… just simply seasoning, browning and finishing off in the oven. The balsamic pomegranate sauce was also the perfect accompaniment! Its sweetness balanced out the saltiness of the pork so well, and it looked so beautiful and gourmet, even though it was completely effortless to make. I served the pork and the sauce with garlic mashed potatoes and candied carrots, and the meal was so delicious, that I actually caught myself “mmmm-ing” my way through it at the dinner table! It was just THAT good!! Probably one of my new favorite dishes–so here it is: {adapted loosely from WBNG}
