In Hong Kong a couple of weeks ago the Marriott we stayed at had the most impressive breakfast buffet you have ever seen! They had a French bakery corner with chocolatines, pastries, freshly baked croissants and honey comb straight from the hive. They had a “full English” section with sausages, baked beans, hash browns, eggs, etc. (Which I loved!) They had a chef section where they’d cook you up some ramen or an omelette. Then they had all the different kinds of dim sum and congee, a yoghurt bar with every fruit imaginable, and they would also mix you up any fruit smoothie you wanted. So basically, they pretty much had every breakfast food you could imagine–it was awesome. My husband’s favorite was the meat and cheese station–specifically the bris, which he ate every single day for an entire week!

Tenderloin Steaks with Mustard Tarragon Sauce and Roasted Sweet Potatoes

I don’t usually make steak for a casual weeknight dinner, but I didn’t have time to cook them up on sunday, and they just needed to be used! This was the first time I have ever made steak tenderloin–so I did a little research to see what they’re traditionally served with, and a mustard sauce was the most popular thing, so I went with that. I know that’s pretty “safe” but this time safe paid off because I couldn’t think of anything more PERFECT to serve the tenderloin steaks with. The sauce was absolutely divine and took just a small handful of ingredients and a couple of minutes to whip up!

American Stuffed French Toast with Peaches

I have come to find that English French Toast (also called “Eggy Bread”) and American French Toast are eaten in entirely different ways! In England our French bread is savory, (all that goes into it is egg and bread) so it’s quite normal to eat it with ketchup, or alongside a fry up! I even had a friend that ate her french toast with marmite… although i’m not sure that’s quite the norm! While in America, French bread is really sweet–they put cinnamon in their egg mixture, and serve it with syrup, berries and cream. I wish someone had told me about this sooner, because when I had french toast here in America, I would eat it with ketchup just the way i’ve always done… and it was SO gross!! I got some funny looks from my American family too… they still love to tease me about that! Anyway, I think in this instance, Americans have got it right! French toast was meant to be served with fruit and syrup and all things sweet, and this stuffed french toast recipe, which takes it one step closer to perfection with all that delicious cream cheese, will prove it! P.S. Whenever I think of maple syrup I think of ELF: “You like sugar don’t you?” “Does syrup have sugar in it? Then Yes!” My husband and I probably quote that every time we have it! I hope you guys like this recipe, especially my English friends who have been eating it all wrong! ;-) Ok. Not wrong, but just not in the BEST way!

Jenae’s Senior Photoshoot

This weekend I had the opportunity to take Jenae’s senior photos–and not only was it one of the most fun photoshoots i’ve ever been on, but the pictures turned out to be some of the best i’ve ever taken! Her Mum came along and acted as the PERFECT assistant! She scoped out cool places here in Mattawa, and brought along some really fun props to use, so I didn’t really have to plan or think about anything! Jenae was absolutely drop dead gorgeous too! A thin, blonde, all American beauty… with big green eyes and a really cute wardrobe! I mean, how could these pictures not turn out cute? Here are some of my favorite shots. We got a lot of locations and wardrobe changes squeezed in to what little time we had, because her mother is a little on the A.d.d side like me! (I LOVED working with her!)
