Oeufs Cocotte {Baked Eggs}

You know those CRAZY days where you just need a really quick, simple fix for dinner? Today was one of those days. I woke up in the morning to my three year old barfing, my husband could barely talk (because he has a throat infection) and my daughter, who’s still recovering from a bad cold, is pretty darn grumpy! Then I look in the fridge and cupboards, and of course… i’m out of just about everything. Milk. Bread… I have no bananas or ginger Ale to help my sick little guy who needs to be on the BRAT diet! So I make the 55 mile trip into town with my girl and get all my grocery shopping done, then I spend the rest of my day running around trying to take care of my poor sick little family.

Dinner time rolled around before I knew it–and I just needed a REALLY quick, simple fix for my sanity. However, I didn’t just want to make a PB&J or box of mac n cheese… even though I was low on time and energy by then, I still wanted to make a delicious dinner for my husband who needed a little love and a pick me up! This dish could not have been more perfect for a day like today! It was so insanely quick and easy… left no mess (just two small ramekins and two forks!!) It was absolutely delicious, and was as good as comfort food gets! I am in LOVE with this recipe!

So here is one of my new favorite recipes: adapted from dine-dash
Ingredients (for 2)
4 slices of prosciutto/Parma Ham
2-3 Tbsp light sour cream
2 cups Cherry tomatoes, Chopped
Fresh Basil
Pecorino romano cheese
4 eggs
Salt & Pepper

Preheat the oven to 360degF. Line 2 slices of parma ham on the bottom of a greased ramekin. Top with sour cream Add the chopped cherry tomatoes Sprinkle with chopped fresh basil Add some shaved pecorino romano carefully crack two eggs on top and season with salt and pepper Bake for 10-15 minutes, or until the eggs are set (white and not clear) {I am getting kind of bored of white plates on neutral counter tops… so I thought i’d make an effort to improve my photography a little bit! You’ll have to bear with me as this Blog is just one big learning process for me!}

My husband saw this come out of the oven, and was afraid to try it because it didn’t look appetizing AT ALL to him! {Which is funny, because I thought it looked delicious!} :-( But when he tried it, he absolutely LOVED it! So don’t be put off by the way it looks, or by the strange combination of flavors, because I promise, they work perfectly together! {Especially with some yummy french bread on the side too!}

I think I am the one who needed the pick-me-up today, actually! My little guy is already feeling better, and is back to his cheeky, happy-healthy self! And my little girl will be better by tomorrow i’m sure. Now i’m just waiting to see which of those things I will contract, so if you don’t hear from me for a while, you know why!
