The “only” Reben

Reuben’s are my husband’s all time favorite sandwiches, and since today he wasn’t feeling too well, I thought i’d whip one up for him! (My three year old son is also really sick, so it was actually nice to whip up something SUPER quick and easy for dinner tonight). My hubby is kind of picky, and when it comes to Reuben’s there’s only ONE way to make them–so this recipe uses pastrami (instead of corned beef) and habenero mustard instead of thousand island dressing, but it actually turned out pretty darn delicious! Reuben’s just might be making my top list of favorite sandwiches now too.

Ingredients (for 2 sandwiches)
4 slices rye bread
1/2 cup sauerkraut
2 Tbsp dressing: thousand island, habenero mustard or horseradish
2 slices swiss cheese
6-8 slices of pastrami

Directions:
Lay the swiss cheese on one slice of rye and top with a few slices of pastrami (3-4 slices) With a fork, cover the meat with a layer of sauerkraut (about 1/4 cup) (PS I know in my picture the layering is all wrong, but this sandwich was the first experiment…. layering the cheese first makes it easier to melt) On the other slice of rye, spread the dressing (thousand island, mustard or horseradish)
Then sandwich the two slices together, and spread butter on the top and bottom of the sandwich. Preheat a grilling pan over medium heat and cook for 3-5 minutes per side until the cheese has melted, and the bread is nicely toasted & darkened in color
And that’s it! Serve with extra dressing on the side, pickles and chips/crisps

Oh this is such a good sandwich!! I have one happy hubby now, AND my 22 month old daughter came and sat on my lap for a bite, and ended up eating almost the whole thing because she loved it so much too! Now I just need to get my little guy feeling better so he can eat!
