Non-Fat Frozen Yoghurt with Raspberries

A month ago I was on the beach in Hawaii!

(This is me with my beautiful daughter Gemma). Before I left, I worked really hard to get into shape and eat healthy, but ever since i’ve been home, i’ve kind of lost that motivation–after all, not many people are going to see me in a tankini here in Mattawa– in my back yard, in the rain! [and i'm definitely not posting a picture of that!!] However, since I really miss feeling so healthy, I have decided, after a month of being lazy, it’s time to get back to it…. and I have found a little motivation with this awesome dessert recipe!

It is so sweet, so creamy and SO delicious that I could easily eat it every day of my life and be totally content! I even love it more than vanilla ice cream, and yet, unlike ice cream it has NO fat! I love recipes that taste like they’re so bad for you, when they’re actually good for you! Oh, and did I mention that this recipe only has three ingredients, and requires next to no work? Seriously. Could it get any better?

Ingredients:
1 container of non-fat Greek Yoghurt (about 4 cups)
3/4 c. sugar (if you want to be super healthy try substituting honey or agave nectar)
1 tsp vanilla extract or 1 vanilla bean

Directions:
Combine ingredients in the bowl of an electric mixer, and beat on low-medium speed for 1-2 minutes, or until the sugar has dissolved. Place the mixture in the refrigerator for 1 hour. Follow the directions of your ice cream maker. For the kitchen aid, assemble the ice cream attachment, and pour in the mixture as it churns. Let churn on medium speed for 20 minutes.
Serve straight away with berries
Or freeze in an airtight container

P.S. My kids love this recipe too! Lately they have been on an ice-cream kick, (since Daddy invented sundae sundays, that have been stretching into sundae mondays, tuesdays and wednesdays!) And yet, they are just as happy to eat this, and I am much more happy to let them have as much as they want of it!

Seriously a great recipe to have on hand this summer! Especially if you’re planning a nice beach vacation, a stroll in your yard in your tankini, or just want to feel a little more healthy!
