Grilled Chicken, Goat Cheese & Spinach Quesadillas with Avocado Sour Cream

I came across this recipe on pinterest the other day, and since my husband and I both love goat cheese and quesadillas, goat-cheese-quesadillas just sounded like a pretty perfect combination to us. Along with some grilled chicken, avocado, spinach and melted jack cheese–these were just as delicious as I was anticipating them to be, and they were SO simple too!! My sister in law came over for lunch today, and I whipped them up in 10 minutes because I already had some pre-cooked chicken from yesterday. Then I had to take a quick step back and ask: “who is this girl who whips up goat cheese and spinach quesadillas as a quick, easy lunch?! I don’t know…. but all I do know is, this beats a PB&J any day!

Ingredients (for 4)

4 Flour Tortillas
2 chicken breasts
Chicken seasoning (optional)
1 tsp minced garlic
1 small bag baby spinach
salt and pepper
4 oz. goat cheese
Shredded monterey jack cheese  (4 Tbsp)
Olive Oil

Directions
Season the chicken with your favorite seasonings, or salt and pepper, and grill 5 minutes either side, or until no longer pink in the center. Cut into 1″ slices at a slight diagonal.
Add the spinach with a tsp water to a pan and cook over medium heat with the garlic, salt, and pepper until just wilted (about 3 minutes). Set asideHeat a frying pan over medium-high heat and drizzle with a little olive oil. Toast the inside of the tortilla for about 30 seconds, flip and sprinkle 2 Tbsp jack cheese over the crisp side of the quesadilla, followed by a few slices of chicken, then the spinach, then the crumbled goat cheese. Place another tortilla on top and cook for 1-2 minutes until lightly golden and crisp on the outside Carefully use a spatula to flip the tortilla and cook for 1-2 minutes on the other side. Serve with sour cream, or avocado sour cream (as follows)

Avocado Sour Cream
Ingredients
2 Avocados, chopped
1/3 c. sour cream
1 Tbsp mayo
1 lime juice
1/4 t onion powder
salt and pepper to taste

Directions
Use a fork to mash the avocado as much as you can
Add all the other ingredients and stir I love this recipe. So quick & simple, semi-healthy, and SUPER yummy!
