Andouille Beef Burgers with Spicy Mayo and Caramelized Onions

I’m not much of a burger person. I never order burgers in restaurants, or fast food chains… or even burger joints if I can help it, and although I don’t exactly know why I dislike them so much, I think it’s just because they’re so big and greasy, and leave me feeling just like they taste! But there’s something about summer that has been calling me to grill a hamburger. It’s just not summer without ice cream, flip flops, swimming in the pool, and grilling burgers!
So today I decided it was time to find an awesome hamburger recipe that even I would want to eat… and I came across this recipe from epicurious! I found it on a list of their top 10 award winning burger recipes, which just gave me faith that it HAD to be good… so I ignored all the weirdness (I mean, nuts… in a burger? And watercress and pickled okra pods?) :-/ and I went way out of my cheddar cheese and ketchup comfort zone to try it! And to my AMAZEMENT it was absolutely delicious!!! Not that i’m a master chef judge or anything, but I just think this recipe has a reallyclever balance of flavors! So if you’re looking for an awesome burger recipe to kick off your summer too, you should try this one!For the Mayo:
3/4 cup mayo
1 Tbsp fresh lemon juice
1 tsp cajun or creole seasoning blend
1/4 tsp hot sauce
For the Burger Patty: 
1/2Lb. andouille sausage, cut into 1/4 inch cubes
3/4 cup pecans, toasted & chopped
1 tsp salt
1/4  tsp ground black pepper
1 1/2Lbs. ground beef chuck or ground beef (20% fat)

For the Onions:
1 1/2 pounds onions, thinly sliced
2 tablespoons olive oil plus more for brushing grill rack
3 garlic cloves, minced
1 tablespoon golden brown sugar
6 large hamburger buns, split
8 ounces crumbled blue cheese

Watercress/arugula/mixed lettuce
Okra pods/pickles

Directions:
Mix all ingredients for the mayo in a small bowl. Cover and chill.
Toss onions and next 3 ingredients in a large skillet. cook until onions are golden, stirring often, about 25 minutes. Season with salt and pepper.

For the Burgers:
Preheat the grill to medium-high (350-400degF). Toss the first 4 ingredients in large bowl. Add beef; blend gently. Shape mixture into six 1/2-inch-thick patties. Transfer patties to small baking sheet.

Brush grill rack with olive oil. Grill buns, cut side down, until golden, about 2 minutes. Transfer buns to work surface. Grill burgers until brown on bottom, about 3 minutes. Turn over; sprinkle with cheese. Grill until burgers are cooked to desired doneness, about 3 minutes for medium. Place some onions, then burger, on each bun bottom. Top each with watercress, mixed lettuce, okra, or pickles
Spread mayonnaise on cut side of bun tops; place on burgers. Serve with remaining mayonnaise.

Now summer’s not just officially here, but REALLY here!! And i’m looking forward to lots more grilling in this beautiful weather! (And swimming and ice cream!)
