Oreo Cupcakes

This memorial day weekend, my mother in law is hosting a big family get together, and is doing all of the cooking, which I always love! (She’s amazing!) But of course, I wanted to do my part too, and help her out–so I asked what I could bring. She asked me to make cupcakes since she was short on dessert, but I didn’t have anything to make cupcakes with! Then I remembered a recipe I once saw on pinterest that called for boxed cake mix with pudding mix, and thought it was the perfect opportunity to try it. Neither of us had chocolate pudding mix on hand, but she had an oreo cake mix, which I thought was even better! So I went home and invented an oreo cupcake recipe, and it turned out SO amazing, I couldn’t wait to share it!! These are by far, the BEST cupcakes I have ever made. They’re moist and light and the frosting is seriously addictive! This will definitely be a go-to recipe in my house! <3


1 box devils food cake
1 packet oreo pudding mix
1 c sour cream
1/4 c vegetable oil
4 eggs
1/2 cup milk
1 tsp vanilla

Oreo Cream Frosting
2 1/2 c heavy whipping cream
4 Tbsp powdered sugar
1/2 tsp vanilla
1 c oreo crumbs (or 1 sleeve)

Preheat the oven to 350degF. Combine the cake mix, pudding mix, sour cream, veg. oil, eggs, milk and vanilla in the bowl of an electric mixer and beat on medium speed for 2 minutes, until all the ingredients are well combined Line 2 muffin tins with cupcake liners and spoon 2 Tbsp of the cake mixture in each. Bake 18-22 minutes, or until toothpick inserted in the center comes out clean. Transfer to a  cooling rack
To make the frosting, combine the cream, powdered sugar and vanilla in the bowl of an electric mixer and beat on medium-high speed for 5-10 minutes, or until it holds it shape. With a spoon, stir in the cookie crumbs When the cupcakes are cool, pipe the frosting on them using a star tip
Cut the oreos in half. I do this by sawing them with a sharp knife (so they don’t crack or crumble) Then top the frosted cupcakes with the oreo halves In the past I have made delicious cupcakes that didn’t look that great, and cupcakes that looked really cute, but didn’t taste all that great–I think this was the first time I made cute AND delicious cupcakes! I’m so proud of myself! And they were so easy!!!!!
