Luxury Hummus Recipe & Tahini Sauce

I just wrote a Blog post about all the delicious mediterranean food I made last night. Since there was a lot, and I didn’t want to put it all in one gigantic post, I just thought i’d write the Luxury Hummus and tahini sauce recipes up here. I LOVE both of these recipes! Super simple, SUPER healthy and of course, super delicious too.

Luxury Hummus: (recipe from Williams Sanoma)
2 cups canned chickpeas (15oz can) drained and rinsed
3 Tbsp tahini paste
2 cloves garlic, coarsely chopped
Freshly squeezed juice of 1 lemon
1/4 cup extra-virgin olive oil
a large bunch of flat-leaf parsley, coarsely chopped
2 Tbsp capers, rinsed and drained
1/2 tsp crushed hot red pepper flakes
salt and pepper

to serve:
pita bread
1 lemon, cut into wedges

Put the chickpeas, tahini paste, and garlic in a food processor and blend until smooth. Add the lemon juice with 3 Tbsp of the oil, and 1 Tbsp boiling water. Process until very smooth. Add plenty of salt and black pepper.Put the parsley, capers, red pepper flakes, and the remaining olive oil into a bowl and mix well. 

Put a mound of the hummus on each toasted pita bread and top with a spoonful of the parsley-caper mixture. Drizzle with more olive oil and serve with lemon wedges.

Tahini Sauce: to go with falafel
(recipe from

1/2 cup tahini (sesame seed paste)
3 gloves garlic, crushed
1/2 teaspoon kosher salt
2 tablespoons olive oil
1/4 cup lemon juice
1 teaspoon parsley, finely chopped (optional)

In a food processor or blender, combine garlic, tahini, kosher salt, olive oil and lemon juice. If too thick, add a teaspoon of warm water until desired consistency. Mix in parsley
 Serve immediately or refrigerate.
