When I was at BYU, I went to Mexico for a couple of weeks on a study-abroad, learning Spanish, and I remember the food I ate there, like it was yesterday. First up, they told us NOT to eat food from the streets–which is exactly where my host family took me on my first night there…. and of course, I got pretty sick. I was relieved when they served me some milk, because it was actually something I was familiar with, and then when it tasted like pure sugar water I realized it wasn’t actually milk–but rather horchata (a sweet rice milk) and I was NOT a fan! Then they gave me some coconut, which I thought would be delicious–until they covered it with lime juice, salt and chilli!

I LOVE, love, love chicken piccata– so I have absolutely NO idea why I have never attempted to make it before today. Not only is it extremely delicious, but it is SO quick and easy–that it kind of blows my mind–(something this delicious shouldn’t be this effortless, and yet it is!) So I have decided, one day when I get tired of cooking new recipes all the time (if that ever happens) i’m just going to make this recipe every day.

In England, Rhubarb Crumble with ice cream or custard (or in my Dad’s case, ice cream and custard) is a pretty traditional and popular dessert, especially around this time of year. Growing up my Mum and Granny both made rhubarb crumble a lot, and it was so delicious– that the other day when my friend gave some rhubarb from her garden, I knew exactly what I wanted to do with it.

This Spring I have been dying to make some really awesome dishes with rhubarb. Back home in England rhubarb is grown everywhere and is so easy to find around spring, so I guess I just took it for granted, but here in the middle of Washington State it’s been really hard to come across! The other day I looked in three different grocery stores without any luck, and just as I was about to give up–my friend said: “You should have told me you were looking for Rhubarb! I have stacks of it growing in my garden, and I don’t know what to do with it all!” it’s kind of funny to me that I drive over 50 miles to go grocery shopping every week, when in this little farm town, people grow absolutely everything, right next door!!!

This weekend my friend Lindsey and her husband (who’s my husband’s cousin) asked if I would take some family photos for them. It’s something we’ve been talking about doing for a while now–and on the day we finally got around to doing it, it was SO windy, that we had to cancel at the last minute. Then the next day, everything just seemed to fall into place so perfectly! The sun came out 20 minutes before the photoshoot. We found a place about 20 minutes away that was just beautiful at every turn–long grasses, rugged water line, rocks, flowers, and a cool bridge. Not only was the sun and setting perfect, but Drew, Lindsey and their two cute kiddos couldn’t have been a more photogenic family! Their kids were SO happy and giggly, and I was able to capture some really sweet moments! This was a REALLY fun photoshoot!
