Gordon Ramsay’s Shephard’s Pie

When I was first married, I made my husband a really traditional, British Shepherd’s pie, and I remember his response to it like it was yesterday. He simply said: “Thanks. But please, don’t ever make that again!” I mean, here I am SO excited to share a part of my culture with him in making the food that I grew up eating- and was feeling so chuffed with myself at making my first ever Shepherd’s pie, and he threw it in my face. I don’t remember what I said or did that day, but I’m pretty sure it involved me wiping it off to reveal my laser beam eyes!!

My really good friend Heather asked if I would take some maternity pictures for her a few months ago- but then she went into labour a little earlier than expected, and I never got around to doing them. I felt really bad that she never got any, so to make it up to her, I asked if I could do some newborn pictures of Liam. This was also my way of thanking her for being such a great friend and helping me out when I had my last baby, by bringing meals and babysitting! She’s really been a life-saver. I have been SO crazy busy lately- but Liam’s already six weeks old, so I had to find a moment to do them ASAP. He was such a little angel. Calm and alert- and seriously CUTE!

Chewy Oatmeal Cookies

On wednesday night I was asked to make a couple dozen cookies for a youth activity at my church. I didn’t want to make chocolate chip cookies–because I thought everyone would bring those, and I wanted to make something different. So I decided to make Oatmeal instead- because they’re also my hubby’s fave’s, and it was time I found my go-to recipe. The funny thing was, there were 8 plates of oatmeal cookies at the activity, and not one plate of chocolate chip cookies in sight! But my husband was happy! I found an AMAZING recipe, and learned a trick or two to make them soft and moist.

A few weeks ago I had made the decision to give up doing photography for people outside of my family and close circle of friends (because I didn’t think I was at the level I needed to be, and I didn’t have the time to dedicate to get to the level I needed to be). Then a nice lady from my church came round with a meal for me & my family while my hubby was recovering from his eye surgery, and asked if I would please take pictures for the Jr. Miss programs & newspapers, and I could hardly say no after she was so nice.

American Pancakes with Strawberries & Vanilla Cream

On Valentines day I woke up extra early to make my little family a special breakfast with heart shaped pancakes and heart shaped strawberries.This was big for me–one because I am not a morning person, two–because I don’t really like making or eating breakfast, and three–because I can’t make American pancakes to save my life!! I think my husband has taught me the secret of flipping them when there’s the right amount of bubbles on top, several times now…. but I’ve just never mastered it. I have just decided that maybe you have to be American to make good American pancakes. My husband ended up taking over, so of course they turned out perfectly, but in my defense, I did make the batter- which means I have a fab recipe to share! Okay, it’s a cheater recipe, but I love it.
