CPK style BBQ Chicken Pizza

This week has been a little on the crazy side. My husband told me on tuesday night that he had to leave to the East Coast in the morning, for a few days, for work. Meanwhile, my 2-year old son, Braden gets really really sick- so i’m up all night with him. All I want to do the next day is SLEEP, but i’m taking care of my 18 month old, and my sick 2 year old, and am knee deep in my de-cluttering and spring-cleaning projects (I wrote about last week). So by the end of the day instead of Blogging all I could do was sit in front of the TV and EAT. That’s how stressful my days seemed to be…. but last night was definitely the icing on the cake.

I just got home from grocery shopping in town, which is 50 miles away, and unloaded all of the heavy groceries, and put my babes to bed. Braden wouldn’t go down because we couldn’t find his monkey- which I spent 20 minutes searching for. Meanwhile, I was supposed to call my mother in law (I promised I would call her when I got back to go over a young women’s meeting I missed because Braden was sick)… so I was putting everything away, and realized I needed to make the meal for my friend heather (who just had a baby), so I started cooking chicken for the lettuce wraps, but ended up grinding it up, rather than chopping it. My son looked at it and said: “What is that?” And I said: “It’s good, do you want to try it?” And he said: “No, it looks like dog food. Mum, are you a dog?” Ugh. Meanwhile, he’s searching through all my bags going: “mum can I have an avocado? Mum can I have a banana? Mum can I have an apple?!” (Why couldn’t he just take a NAP??!)

So then my visiting teachers knock on the door. I completely forgot they were coming!!! And my kitchen is a disaster, and Braden is under my feet, and the dinner’s messed up, and i’m trying to bake something up really quick to make up for my HORRIBLE dinner…. so we have a quick little message and they go. Then i’m late to deliver the food (and I HATE being late) and my husband texts me and tells me he’ll be home any minute…. and I feel bad for not being there when he gets back…and for him to see our house after that awful bomb hit it! :-/

It was just THAT kind of a day. But now i’m just glad my husband’s home, and that my little boy is feeling well again, and that my house is looking clean so I can function properly- and now I can get back to Blogging. Amidst the CHAOS this week, I have accomplished a lot, so I guess we’ll just have to play catch up a little bit.

Here’s the BBQ Chicken Pizza I made on Thursday night. It’s a shame my husband was in the East Coast, because it’s his all time favourite pizza! (I haven’t heard the end of it since he’s been home) and now I’m wondering what makes me a worse wife: making his favourite the one time he’s not here, or forgetting it was his favourite completely!!? Well, since I did BOTH, I guess i’m just going to have to redeem myself by making it again tonight, which is fine by me, because this is seriously delicious!!! And it’s pretty simple too.

Here’s what you’ll need:
(for the crust)
1 packet/1 teaspoon Instant Or Active Dry Yeast
1-1/2 cup Warm Water
4 cups All-purpose Flour
1 teaspoon Kosher Salt
1/3 cup Olive Oil

For the toppings:

3 chicken breasts

Fresh mozzarella cheese
BBQ sauce
1/2 red onion
chopped fresh cilantro

Directions:
Sprinkle yeast over 1 1/2 cups warm water. Let stand for a few minutes.

In a mixer, combine flour and salt. With the mixer running on low speed (with paddle attachment), drizzle in olive oil until combined with flour. Next, pour in yeast/water mixture and mix until just combined, and the dough comes together in a sticky mass.

Coat a separate mixing bowl with a light drizzle of olive oil, and form the dough into a ball. Toss to coat dough in olive oil, then cover the bowl tightly with plastic wrap and set aside in a warm place. (I preheat my oven to its lowest setting then turn it off so it’s warm, and put it in there for an hour)

When it’s doubled in size, it’s ready to go.Preheat the oven to 375degF. Place the chicken in a baking dish, cover with your favourite BBQ sauce, then bake in the oven for 25-30 minutes, until done.

Chop the chicken into bite sized pieces.Slice the mozzarella Slice the onions into half moons Coat a baking tray with olive oil, then roll out the dough, and place it on the tray
Spread more olive oil on top of the dough, and season with salt and pepper. Lay the mozzarella cheese on top top with the BBQ Chicken and onions Put a few more drops of the BBQ sauce on top, then bake at 475degF for about 15 minutes, or until the crust is lightly golden. Top with chopped fresh cilantro, or parsley
Even though my husband wasn’t around when I made this, [and I made and ate way too much] i’m still glad I made it because it ended up being a great plan B for my friend Heather– instead of those awful lettuce wraps (which is now just one more thing I need to learn how to master!)
