Bombay House Chicken Tikka Masala

First off, before I post this AMAZING recipe, I just feel as if I need to explain myself. I haven’t made a post in an entire week because my husband just had PRK on his eyes! In case you’re wondering, PRK stands for ‘pretty radical karate.’ He got a rather nasty chop to the eye, and has been on bed rest all week!! Okay, i’m kidding. PRK is really just an intense form of LASIK which takes a longer time to recover from (I know, not as cool!) But, he’s tons better now, and i’m excited to get back to cooking and Blogging.
Before I move on, I have to explain one more thing pretty quick. I made the “mistake” of telling my visiting teachers about Dean’s eye surgery last week, (because I really needed back up baby sitters for taking him to appointments blind- I mean him not me) but instead, they organized women from my church to bring us meals every single day last week!! It was SO nice! The women in my church can really cook- and i’m really grateful for their help, and to have a little break. Although- I never really give myself a “break” because I hate sitting still for too long- so I have been working on a few exciting things on the side, which I will post about later.
But for now, I want to post one of my favourite recipes of all time, ever!! Before I came to America for university, I worked as a waitress in an Indian restaurant in my village in England, and tried pretty much everything on the entire menu. Then I married a guy who had never tried Indian food in his entire life, so I had to change that! We went to the Bombay House in Provo where we lived at the time, and he got hooked on Chicken Tikka Masala- it was love at first bite. Like a twilight romance. We went back so often that the waiters pretty much knew us by name. That’s embarrassing.
So, now you have my life history- do you finally want the recipe?! This isn’t just any chicken tikka massala recipe- this is CTM Bombay House style, which is our all time favourite. Since we live in Washington State now, and it’s rather difficult to pop by every friday night, I thought I’d make a little Bombay for my house instead.
1 1/2 Lbs chicken breast, chopped into bite size pieces
(Marinade)
1 cup plain yoghurt
2 Tbsp lemon juice
2 tsp cumin
2 tsp red pepper
2 tsp black pepper
1 tsp cinnamon
1 tsp salt
1 tsp ground ginger
(sauce)
1/4 cup cilantro
1 Tbsp unsalted butter
2 garlic cloves, minced
1 jalapeño, minced
2 tsp ground coriander
1 tsp cumin
1 tsp paprika
1 tsp garam masala
1/2 tsp salt
1 can (14.5oz) tomato sauce
1-2 c heavy whipping cream
Directions:
Cut the chicken into 1 inch cubes.
Put the chicken in a dish or large ziploc bag, and add all of the marinade ingredients: yoghurt, lemon juice, cumin, red pepper, black pepper, cinnamon, salt, & ground ginger.
Stir to coat the chicken. I probably shouldn’t have taken a close up of that.
Put in the fridge for 1-2 hours then discard the marinade.
Grill or cook the chicken in a high sided skillet about 5 minutes per side, or until no longer pink inside. (If you thread the chicken on skewers and grill it outside it not only tastes better but doesn’t stink out your house). However, there is snow outside my house, so a pan works just fine for me!!
For the sauce
Melt the butter over medium heat. Add garlic and jalapeño and cook for 1 minute.
Add coriander, cumin, paprika, garam masala and salt. Stir to combine
Stir in tomato sauce and simmer for 15 minutes until thickened
Add the cooked chicken to the sauce and stir in the cream according to desired heat: 1 cup for hot-medium, 2 cups for medium-mild. Serve with white rice and garnish with fresh cilantro.
I also made garlic naan (because they don’t have Indian cooking aisles in America like they do back home). I somehow managed to find a plain naan in Walmart, and covered it with butter and crushed garlic and broiled it for about 4 minutes until it started to darken the edges. SO GOOD!!!
I invited my brother in law Dex over for dinner, and a few bites in we start gasping and reaching for the milk carton like we’re doing the gallon challenge- and then I realize…. I didn’t put jalapeños in the sauce…. I put freaking seranos in it!! Whoops. My husband was loving it, but I had to drink a lot of milk after every bite. It was good for me though. Put hair on my chest. Okay, that’s just wrong to even joke about.

I’ve tried your recipe 4 times now, and I can’t get my sauce to look like yours. Every time I add in the cream, it thins out and looks tan instead of that bright thick orange. What’s your secret?

HEAVY whipping cream. The thickest you can get! Don’t substitute any other cream or coconut milk. See if that works, and let me know! Good luck!

Honestly, I can’t remember where I found this recipe, I just know it tastes exactly like CTM I had all the time at Bombay House! You can make it with any meat you want. Lamb would be delicious! Even prawns would be amazing!

I would put coconut milk in the chicken Kurma, but not the tikka massala. I used to work at an Indian restaurant and have done research on other CTM’s and it’s always heavy cream… but maybe you’re onto something! Let me know how yours turns out!

Made this for lunch today. Absolutely delicious! I do think I’ll try it with yogurt instead of cream next time I make it though since I am going to want it twice a week now and let’s be honest, heavy cream twice a week isn’t exactly figure friendly.

There are two places you can find garam masala at Winco… first, try the “bulk foods” section (the containers where you spoon the spices into baggies yourself). Then try the aisle (probably near the baking stuff) with all the salt and paper and spices for a jarred version. it shouldn’t be a difficult “speciality” spice to find. Failing that, harass a shop assistant! I always ask for help… i’m probably really annoying! But I always find what I need! Hope this helps.

I looked in both those places and could not find it. I asked an employee and what she gave me was chicken Marsala spices which is not the same thing. I looked online to just make it myself and the ingredients are some of the same things you already have listed. Guess ill just have to make my own. Thanks!

I found the garam masala at Target! The Archer Farms brand was out of stock, but they have an organic option that should be really close to the Archer Farms that I found. I can’t remember the brand though. Hope this helps!

It makes 4 servings. The traditional rice to use is Pilla/”pilaf” rice, but I make jasmine (white) rice with it.

How hot (spicy) is this? I know that’s a subjective question. I love all kinds of food, Indian flavors included but I am a huge wuss when it comes to heat. Was thinking of cutting back on the red pepper and that the jalapeno would still bring some heat that would be manageable for me. I cook with jalapenos all the time and can handle that much heat but this much cayenne is a little scary to me

I am a total wuss when it comes to heat too! My husband makes jokes about me and bell peppers… so if you can handle jalapeños, you will definitely be able to handle this! If it is a little too spicy, add a little extra cream, and you’ll be totally fine!

Thank you so much for this recipe. I absolutely loved it! I cut the recipe by three because cooking for just one can be so difficult. I wish I would have made the full recipe to have more leftovers. That’s one of the best things about Indian food–it’s even better the next day, because it marinades itself. There are never left-overs at our house :-/ But if there were, I would make a chicken tikka masala panini with lots of melted mozzarella cheese. (You sound really adventurous, so you should totally try it!) P.S. I love that you’re the adventurous eater in your family like me! My family in England aren’t too bad, but my husbands family are all meat and potatoes, so, like you, i’m going to have to bring them around eventually!

I LOOOOVE CTM from bombay house! I guess they are doing away with the tikka masala curry paste, so I have to make it from scratch now! Can I substitute yogurt in the sauce instead of heavy cream? I know the paste calls for yogurt…do you think it would turn out the same?

I didn’t even know they had CTM curry paste! Hopefully you will find this recipe simple enough to make without. The garam masala will be in the spice aisle (with the salt and pepper) at Wal-Mart. I think Wal-mart also carries naan bread, but if not, I know Winco does for sure. I just use canned tomato sauce (not tomato ketchup or tomato puree), and as far as the cream… I know it would be way healthier to use yoghurt, but it wouldn’t be the same! Unfortunately

We just barely bought naan at WalMart. It is over in the bread/bakery area. But, it is about $3 for 4 pieces. Next time we make this recipe, we are making our own naan because it costs too much to buy it.

Yummy naan bread recipe…so easy. It is even better if you make the dough the night before or morning of and let it set in your fridge. I used a cast iron skillet until the bottom was golden brown, and then put it in my oven under a low broil rather than a high. It is ready once it has puffed up. So soft and chewy, but not quite like restaurant naan bread. I’ve tried a few recipes, and this is the one I like the best so far.

I made a different tiki masala recipe last night and it turned out a little pasty. I was going to try it with coconut milk and diced tomatoes, but am glad that I ran on to these comments first. Ooh, that’s a good idea. If I were to try it, i’d put all the ingredients (chopped chicken, tomatoes, all the spices, etc) in the crock pot… and add the cream at the very end, and garnish with cilantro! I’m not brave enough to try it… (I don’t really have a whole lot of luck with crock pot meals turning out amazing), but if you are brave enough, i’d love to know how it works out!

This looks delicious. I made tikka masala on request last summer, but we didn’t like how it turned out. It had way too much garam masala (like 3 tablespoons in total) in it for either of our liking. Going to give your version a try!

Just a FYI – I got garam marsala at the Sunflower Market – by their bulk item they have spices in smaller containers that you can open and put in a small zip lock bag. I had to ask for help to find it, but they did have it!

I moved to the US about 10 years ago. The one thing I really miss was the takeout curries, CTM being my favorite. I tried making this a few years ago and it came no where close to what I remember. I made this last month and I loved it. Even my 5 year old daughter loved this.

Hey Elizabeth. Sorry for being confusing…. i’m guessing you’re from England, because “tomato sauce” over there could also mean ketchup. Here in the states we have canned tomato sauce which is basically thick, pureed canned tomatoes. I would take a can of chopped/plum tomatoes and throw them in a blender to make tomato sauce, or just use a can of tomatoes if you don’t mind the chunks (although it won’t be quite the same, and give you that nice thick, creamy sauce you want)! I hope this helps you out.

I’m cooking the recipe now and I just realized you don’t mention when to add the chicken and whether or not to cook chicken at all longer (it looks like you add it after the tomato sauce and before the cream). However since I only cooked chicken 8 minutes, I doubt it is done yet. Also, there is no way in only 15 minutes to get the tomato sauce to thicken to your very thick, thick paste looking sauce (prior to the cream). Is this perhaps because I am at 8200 ft. altitude? So it takes a lot longer to thicken tomato paste?

Suz, thanks for your comment–I have tweaked the recipe, because you were right. As far as the tomato paste–just let it simmer as long as it takes to thicken it wherever you are. 15 minutes works up here in WA state, but I hadn’t thought about that! Sorry.

I’ve made this several times now, and I have found that boneless skinless chicken breasts make this dish all that much better. The meat is more tender and juicy than you get with breasts. I actually just made a triple batch last night for a weeks worth of leftovers.

great recipie taste is real close restraunt i grew uo eating this food as a child. living in this country for quita awhile but this is good i cook indian food 2 maybe three times a week. living in wa state now. you can cook your own nahn in the oven and its alot better than the store.

Made it tonight. So if your garam masala is a mix that has the mango and sour, you had better tone it down to like 1/2 tsp. My dish came out tasting more like the sour of chana masala. Live and learn.

Thank you for the wonderful recipe with all the pictures! I’ve tried making an indian dish once before and even though it smelled flavorful, it was just bland tasting. The Bombay House by us has a “Bollywood Chicken” dish that I really like with pineapple. I added a small can of (drained) pineapple chunks to this dish at the end and it turned out awesome! I’ve been doing a lot of research on Chicken Tikka Masala and was really glad to stumble upon your blog. Thank you very much. I also have eaten many times at the Bombay House. Your recipe is pretty close, but it’s actually missing one ingredient that the Bombay House is confimed to use. They are called Fenugreek Leaves. They are also known as: Methi Leaves, Methi Fenugreek Leaves, Kasuri Methi, Kasoori Methi or Dried Fenugrek Leaves. Almost all Indian Restaurants that make a British Style Inspired Chicken Tikka Masala use Fenugreek leaves. A small handful is added at the end of the cooking. You can obtain the leaves from specialty Indian Grocers (there used to be one about 1 block up the street from the SLC location of Bombay House, but it’s gone out of business.) There are others in SLC, or you can just order online. It is an essential part of the taste.

Ooh, my mother in law could answer this question! She’s a pro at making freezer meals! But my {not very expert answer} would be sure!! I don’t see why not. Would you cook the chicken in the marinade, and then freeze it, or just keep it raw ready to cook? You could just make up a big huge batch of CTM and freeze the whole meal, ready to heat up! Sorry i’m not super helpful, but that is a good question.

Hello, I’m Using the Tika Masala Receipt but using Lamb instead of chicken, would you add any other ingredients for the lamb or same. And the yogurt
marinade, do you kinda of squeeze it off or leave some on? When frying the lamb it seemed to make a lot of liquid, I know american meat has alot of water unlike english meat but i thought it was because i left too much of the yogurt marinade on it?. Hm. That’s a great question. I wouldn’t change the recipe, but if it is too watery, maybe just drain the lamb on paper towels before you add it to the sauce. I always use tongs to transfer the chicken to the sauce, and a lot of the marinade comes with it, making it kind of watery during cooking, but I add the chicken with its “juices” to the sauce, without draining it, and it adds a lot of flavor. I like it that way! I hope this helps!

I have tried their bollywood chicken and love it! I haven’t thought to develop a recipe for it… but maybe I will now! Until then, try this recipe http://www.mattawamum.com/2013/01/tezpur-pineapple-shrimp/ it’s the tezpur pineapple shrimp, that has pineapple and potatoes, if you substituted chicken in there, I think it would be really similar! Let me know how you like it!

I like heavy whipping cream because it creates such a thick sauce, but I have used single cream in the past too, and you’re right… it makes for such a flavorful sauce {that is a tiny bit healthier!} Thanks for your comment Melissa.

Yum! I found your recipe on a whim searching for a Chicken Tikka Masala copycat recipe. I’ve never been to Bombay House (or heard of it), but this tastes just the same as at my family’s favorite local restaurant. I even doubled the recipe and we will be having it again for dinner tomorrow. Both my husband and son loved the dish as well and with only 1 cup of heavy cream it was just perfect for us! Does this really taste like the CTM in the restaurants? I have tried at least a dozen recipes and none of them taste like the CTM I eat in any US restaurant.
I want the nice creamy CTM that they have at buffets etc. What do you think?

We had this for dinner tonight, and it was seriously amazing! The changes I made were to reduce the cayenne pepper to 1/2 teaspoon in the marinade and I removed the seeds from my hot pepper. I used coconut oil instead of butter and low-fat evaporated milk instead of whipping cream and it still tasted rich and decadent. I also added a half tablespoon of dried fenugreek leaves when I added the milk. I’ve made butter chicken, before but this is the best recipe I have tried, and it was also the easiest. The spices and even the salt content were absolutely perfect! Feel free to post more curry recipes! I will have to check out your other recipes now. Thanks!

I recently made your recipe and couldn’t believe how easy and delicious it was. I plan on making it for a large family gathering tomorrow. Can the chicken marinate over night or should it just be a couple of hours. Also, I learned a trick somewhere along the way that if you want that smoky flavor and you can’t grill outside, try heating up a piece of charcoal and put it in a small heat resistant bowl or ramekin. Pour melted butter over the charcoal and put the smoking ramekin in the pot with a lid on for a few minutes.
