First off, before I post this AMAZING recipe, I just feel as if I need to explain myself. I haven’t made a post in an entire week because my husband just had PRK on his eyes! In case you’re wondering, PRK stands for ‘pretty radical karate.’ He got a rather nasty chop to the eye, and has been on bed rest all week!! Okay, i’m kidding. PRK is really just an intense form of LASIK which takes a longer time to recover from (I know, not as cool!) But, he’s tons better now, and i’m excited to get back to cooking and Blogging.

Yesterday I had my brother and sister in law over to watch a movie, so I thought i’d be a good hostess and whip them up something delicious to eat, (especially because they babysit for us for FREE sometimes, and I owe them really big!) But by the time I had picked up the house, and put the babes to bed, I had about five minutes to spare before they arrived to make something. Then I remembered a recipe I saved on pinterest called 5 minute mousse, and decided to give it a try, and it was pretty heavenly.

Yesterday it started snowing, and my kiddos were so excited to go outside to play in it- except I couldn’t take them, because I had the stomach flu so bad, I could barely walk around! (It kicked my butt). And it was so depressing to watch our only good snowfall of the season go to waste, and for my babes to not get the chance to have some fun in it.

If there is one dish that I absolutely have to have down it’s mac n cheese. To say my babes are obsessed with it is an understatement. I think it’s what they survive on (since they pick at just about everything else). In fact, it’s kind of been my measure of how unwell they are- when they don’t lick the bowl clean at dinner time. Okay, that’s an exaggeration- my polite half-English babies would never do that! But, you get the picture… they LOVE it.
