First off, before I post this AMAZING recipe, I just feel as if I need to explain myself. I haven’t made a post in an entire week because my husband just had PRK on his eyes! In case you’re wondering, PRK stands for ‘pretty radical karate.’ He got a rather nasty chop to the eye, and has been on bed rest all week!! Okay, i’m kidding. PRK is really just an intense form of LASIK which takes a longer time to recover from (I know, not as cool!) But, he’s tons better now, and i’m excited to get back to cooking and Blogging.

Yesterday I had my brother and sister in law over to watch a movie, so I thought i’d be a good hostess and whip them up something delicious to eat, (especially because they babysit for us for FREE sometimes, and I owe them really big!) Yesterday it started snowing, and my kiddos were so excited to go outside to play in it- except I couldn’t take them, because I had the stomach flu so bad, I could barely walk around! This week has been a little on the crazy side. My husband told me on tuesday night that he had to leave to the East Coast in the morning, for a few days, for work. Meanwhile, my 2-year old son, Braden gets really really sick- so i’m up all night with him. All I want to do the next day is SLEEP, but i’m taking care of my 18 month old, and my sick 2 year old, and am knee deep in my de-cluttering and spring-cleaning projects (I wrote about last week). So by the end of the day instead of Blogging all I could do was sit in front of the TV and EAT. That’s how stressful my days seemed to be…. but last night was definitely the icing on the cake.
