Chocolate Lava Cakes with Oranges & Cream

This is one of my all time favourite recipes! My husband makes fun of me because I have a lot of “favourites”… but this one is definitely up there because it levels with a chocolate souffle in terms of deliciousness, and yet it’s pretty quick and easy to make. Plus, you can “jazz it up” with whatever you like. It’s kind of like the little black dress of desserts!

So, since it’s December, and i’m pretty much celebrating Christmas all month long, I thought i’d jazz it up with oranges. There’s just something about oranges and christmas, and oranges and chocolate, and christmas and chocolate…. they all pretty much just work hand in hand! Here is the recipe. It makes 4, (but in the pictures I doubled the recipe to make 8, so don’t be confused!)

Ingredients:
4 Tbsp unsalted butter, plus more for muffin tins
1/3 cup granulated sugar, plus more for muffin tins
3 large eggs
2/3 cup all purpose flour
1/4 tsp salt
8 ounces bittersweet or milk chocolate (I use Ghiradelli milk chocolate… it’s perfect for this!)
Confectioner’s sugar for dusting
Orange/tangerine slices
Whipped Cream

Directions:
Preheat your oven 400°F.  Generously butter 4 cups of a standard muffin tin.  Dust with granulated sugar, and tap out excess.  Set aside.
 In the bowl of an electric mixer, cream the butter and granulated sugar until fluffy.
 Add the eggs one at a time, beating well after each addition.
With the mixer on low speed, beat in the flour and salt until just combined.  Beat in the chocolate (do not overmix).
 Divide the batter evenly among the prepared muffin cups.
 Place the muffin tin on a baking sheet; bake just until the tops of the cakes no longer jiggle when the pan is lightly shaken, 8 to 10 minutes.  Remove form the oven; let stand for 10 minutes.

To serve, turn out the cakes, and place on serving plates, top sides up.  Serve with oranges dusted in confectioner’s sugar, whipped cream, or whatever you like!
(peppermint infused whipped cream, or home made peppermint ice cream would also be super delicious with these, and ‘festive’ too!)

The reason why I made 8, was because I volunteered to take dessert to a couples game-night we had the other day, and they were such a big hit! Then, I made them AGAIN the next day (this is how much I love this recipe… I hardly ever make recipes twice… especially in the same week!) So I was feeling like an especially chunky monkey- and then my Father in law was teasing me today saying how skinny I was, so I weighed myself… for the first time since August, and I have lost weight! I don’t know how exactly, but it felt good! Maybe these are the secret to weight loss! (How awesome would that be!)
