Home Made Peach Cheesecake

I still have a lot of peaches left to use, so today I thought i’d make a peach cheesecake! Dean’s Aunt gave me this recipe a couple of years ago, and I have made it a LOT because it’s really really good… however, this time was the first time I made it all from scratch. It doesn’t look pretty or elegant, but the taste makes up for it!

Here’s what you need: graham cracker crust (brought/made), 1 8oz package cream cheese, 3/4c powdered sugar, few drops of milk, 5 large peaches, 1/2c water, 2Tbsp cornstarch, 2Tbsp butter, and 1/2tsp of the secret ingredient: almond extract! 

First, make your graham cracker crust. I suggest you buy one (if you’re American, and can!) Because after all the effort & time and completely devastating my kitchen with crumby-mess (I had a little helper contributing a little) my graham cracker ended up falling apart and looking uglier than the store bought one anyway!

Next step: whip the cream cheese, powdered sugar and a couple drops of milk until it’s smooth and creamy… (I did mine in my kitchenAid for 4 mins). Then put your cream cheese mixture in the pie crust shell and smooth it down. 

Next step: let your little helper lick the spoon! 

Next step: peel and chop 2 large peaches (3-4 small) and place in shell: 

Final steps: peel, chop then blend 2 large peaches. In a pan, combine the blended peaches with 1cup sugar, 1/2cup water, and 2Tbsp cornstarch. Cook until thick, then add 2Tbsp butter and 1/2tsp almond extract. Pour the sauce over the peaches, and chill (you and the peaches that is!) 

I garnished it with a few almonds (to enhance our secret ingredient) but still didn’t make it look very pretty! Oh well… it will taste FAB I promise!
