Today I thought I would get out of my ‘cooking comfort zone’ once again, and attempt something a little “challenging.” Not only is making a perfect hollandaise sauce from scratch (without it separating) a little tricky, but then you have to poach a perfect egg, whilst cooking the canadian bacon and warming the English muffin all at the same time, so that it all comes together nicely within minutes!

Yesterday I made my first ever Peach Cobbler, and it took HOURS! I made the pastry from scratch, left it to chill for 2 hours, peeled and prepared the fruit with all the spices, rolled out the dough, put it all together ugly, reworked it and put it together okay, baked it for 45 minutes, left it to cool down, then whipped up some cream, and served it to my hubby…..

It’s SUPER modern, so some of you will think it’s cool, and some of you will think my two year old painted it! I still have a lot of peaches left to use, so today I thought i’d make a peach cheesecake! Dean’s Aunt gave me this recipe a couple of years ago, and I have made it a LOT because it’s really really good… however, this time was the first time I made it all from scratch.
